Well I had to make a cheesecake today. Couldn’t resist the temptation.
It is really simple to prepare!
200gr plain biscuit crumbs – use country cookies; 100gr melted butter; 400gr cream cheese; 1 tin of condensed sweetened milk; and 100ml lemon juice.
1. stir together the biscuit crumbs and melted butter. Press into a baking dish. Refrigerate.
2. use an electric mixer to beat the cream cheese until smooth. Beat in the condensed milk and lemon juice until well blended and smooth. Poor the cheese mix into the dish (don’t stir too much or shake it up; the air whipped in keeps it light).
3. Refrigerate until firm, 2 to 3 hours.
Enjoy! Delicious as a dessert after a barbecue.
